This is the only nunnery in Japan that offers the 680-year-old Shojin ryori (vegetarian cuisine) prepared for imperial princesses to the general public. Reservations are required for meals, with meals starting at noon only. Dishes are prepared and served one plate at a time, taking 90 to 120 minutes.
No animal products are used, including the dashi broth.
In order to preserve the natural, light flavors of the ingredients, most dishes do not even use dashi.
Sankoin's Shojin ryori (vegetarian cuisine), sometimes described as "Zen on a plate," combines the cultures of the Imperial Court and Zen temples to create a unique style known as "Elegant Sabi."
